水果塔 Mini Fruit Tarts

Ingredients

材料:

適量 喜愛的水果

塔皮材料:

50 g 室溫牛油

15 g 糖粉

20 g 全蛋液

100 g 麵粉

卡斯達醬材料:

25 g 即溶蛋黃粉

1 茶匙 糖粉

85 g 冷鮮奶

100 g 鮮奶油

Instructions

塔皮做法:

牛油糖粉攪拌至糖粉溶化,加入蛋液 ,攪拌至完全融合一體

加入麵粉,混合均勻即可

把麵糰分成8份 (每份23g),各自放入塔模里捏平均,插洞

預熱烤箱150度,烤25分鐘,或到金黃色即可

卡斯達醬做法:

加入冷鮮奶,即溶蛋黃粉,糖粉,攪拌均勻

另一個盆把鮮奶油打發

把1和2混合,放入擠花袋子,擠入塔皮里,擺上水果丁

撒上糖粉即可

Ingredients (for tart shell):

50 g butter (room temperature)

15 g icing sugar

20 g liquid whole eggs

100 g flour

Ingredients (for custard cream):

25 g instant custard powder

1 tsp icing sugar

85 g fresh milk (chilled)

100 g whipping cream

Instructions

Steps (for tart shell):

Stir butter with icing sugar until it melts, add in eggs and mix well

Add in flour and mix well

Split dough into 8 portions (23g each), insert each portion into the mould, pinch evenly and poke a hole

Preheat the oven with 150°C, bake for 25 minutes until it turns golden brown

Steps (for custard cream):

Add in fresh milk, instant custard powder, icing sugar and mix well

Use another bowl to whip the whipping cream

Mix both portions above together, insert it into piping bag, squeeze into the tart shells and add in the fruits

Dress it with icing sugar
